Honey Mustard Smoked Country Ribs

Ingredients:

 

MEAT:

2 -2.5 lbs Pork country ribs bone in (or out, your choice)

Yellow mustard

KOSMOS Dirty Bird Rub

** Trim meat as needed **

Honey Mustard Glaze:

4 Tbsp Butter

½ cup Honey

2 tsp garlic paste

¼ cup Dijon mustard

2 tsp Dirty Bird rub

 

 

Instructions:

 

PREP SMOKER/GAS GRILL:

Set Smoker to run at 275 -300 Degs

Gas Grill - setup for indirect cooking - 280 deg.

- if using wood chip smoker box - insert smoker box at either end of grill

** Use Apple & Cherry wood chunks/chips

MEAT PREP:

[Use a very light coat of mustard as binder for rub]

Sprinkle Ribs with a heavy dose of KOSMOS Dirty Bird rub or favorite Dry rub – let sit for 15 -20 mins to sweat.

THE COOK:

Put meat on smoker/gas grill grates

Smoke to internal temp of 185 Deg (turn at least once during initial cook) ~1.5 – 2.5 hrs

Glaze ribs at 185 Deg with Honey Mustard Glaze (see above).

Smoke until internal temp of 200-205 is reached (~ 45 – 60 mins), pull meat & let rest 10 mins

Meat ready to serve with favorite side dishes.
